Make sure to check those nitrites too. There is a point in the cycle where ammo seems to be converting to nitrite at a higher rate than nitrite to nitrate. I noticed this when I did my last fishless cycle. Once the entire cycle is done I imagine your nitrates will be way higher then 5.
