Ps where at? my dads an executive chef used to work at La Colline before they sold it. And many other places Now he works for Bistro Français.

BTW the hongi I got from you are growing fast

Regular skate taste great (they suk to clean) but there's something about the Chesapeake skate that just doesn't taste good at all . It has a heavy iron flavor like if you ate the bloodline

at least we know that it's not the pristine water conditions in the bay affecting the flavor at all...

Not to derail my own thread, but how many folks would be interested in having a "Best Tasting Cichlid" competition for either one of the meetings, the summer BBQ or some other event?

Here's what I've been contemplating:

People (or teams) prepare some number of small portions of Tilapia in the method of their choice

The club provides a small subsidy to each team/individual who wants to participate (to offset the price of ingredients)

Members donate a few bucks (to support the club / offset the cost of prizes) to take part in the tasting / judging.

People / teams with 1st, 2nd and 3rd highest number of votes win bragging rights, a certificate and some prize.

Does this sound like fun to either enter or participate in?

Anyone interested in organizing it?

Anyway, like I was sayin', tilapia is the fruit of the sea. You can barbecue it, boil it, broil it, bake it, saute it. Dey's uh, tilapia-kabobs, tilapia creole, tilapia gumbo. Pan fried, deep fried, stir-fried. There's pineapple tilapia, lemon tilapia, coconut tilapia, pepper tilapia, tilapia soup, tilapia stew, tilapia salad, tilapia and potatoes, tilapia burger, tilapia sandwich. That- that's about it.

Or we can have burgers and hot dogs and chips ;)
