I don't think the lucky bamboo can be submerged permanently. It needs to grow out of the water to prosper.

I have no idea how to do a chinese theme with plants. But I've had success with these plants in an African tank:

java fern
crypts
anubias
onion plant
vals
giant hygro

How about...

...guppy grass (Najas guadalupensis)? I have wads of it in my 40 Tang tank and will gladly give you enough to choke a small ruminant. You have to provide your own ruminant if course...

Can we see a pic of this tank? I've never had guppy grass that didn't fall apart on me, get into everything, make a total mess.....
